Juan Amador

We are going to meet Germany’s most unusual three Michelin star cook, Juan Amador, in his restaurant in Langen near Frankfurt. He is one of the Germany’s leading avant-garde three star cooks. He was awarded three Michelin stars in 2007 which he successfully defended in 2009.

Besides running his eponymous restaurant, ”Amador” in Langen, he is also running “Amesa” in Mannheim which he opened in 2009. Ten weeks after the opening he received a further Michelin star. Juan Amador is known as the pioneer in experimental cuisine. He creates new textures and flavours and sometimes uses scientific measurement procedures with precision which allow longer cooking times which sometimes take days.
